My hygienist used a prophy jet on my veneers, which caused them to get discolored. Can I whiten them?

Unfortunately, your porcelain veneers can’t be whitened using teeth whitening if that is what you mean. No cosmetic work can, even dental crowns.
However, there is a diamond polishing technique that can restore them. It is an extremely advanced technique, so if your office didn’t know not to use a prophy jet, they’ll likely not know the technique.
Because your office damaged the veneers they should either pay to have them repaired, or replace them themselves.
